Ingredients
For the Cabbage & Blueberry Infusion Base:
2 cups purple cabbage, finely shredded (outer leaves removed)
1 cup fresh blueberries (plus extra for garnish)
3 cups filtered water (for simmering)
2 tablespoons fresh lemon juice (acts as a natural flavor enhancer and brightens the purple hue)
2 tablespoons raw honey, pure maple syrup, or agave nectar (adjust to taste)
For Serving:
2 cups sparkling water, club soda, or coconut water (chilled)
1 cup ice cubes
Fresh mint sprigs (for garnish)
Thin lemon wheels (for garnish)
Step-by-Step Instructions
Step 1: Prep and Clean the Produce
Begin by thoroughly rinsing your fresh purple cabbage and blueberries under cold running water.
On a clean cutting board, finely shred 2 cups of the purple cabbage, discarding any tough core pieces. Measure out 1 cup of fresh blueberries, picking through to remove any stems or bruised berries.
Step 2: Simmer the Botanical Base
In a medium saucepan, combine the 3 cups of filtered water, the shredded purple cabbage, and the fresh blueberries.
Place the saucepan over medium-high heat and bring the mixture to a rolling boil.
Once boiling, reduce the heat to low, cover the saucepan with a lid, and let it simmer gently for 10 to 12 minutes. This process allows the water to extract the rich anthocyanins, natural sugars, and deep flavors from both the cabbage and the blueberries.
Step 3: Strain and Cool the Concentrate
Remove the saucepan from the heat source.
Carefully pour the hot liquid through a fine-mesh sieve into a heat-safe glass bowl or pitcher, pressing gently on the solid cabbage and blueberries with the back of a spoon to extract every drop of vibrant juice. (Note: You can repurpose the leftover cooked cabbage and berries in smoothies or oatmeal).
Stir in the fresh lemon juice and your sweetener of choice (honey, maple syrup, or agave) while the concentrate is still warm so it dissolves completely.
Allow the concentrate to cool to room temperature, then place it in the refrigerator for about 20 minutes until thoroughly chilled.
Step 4: Assemble the Refreshers
Take four tall serving glasses and fill each one with a handful of ice cubes.
Divide the chilled purple cabbage and blueberry concentrate evenly among the four glasses (filling each about one-third of the way).
Top off each glass with chilled sparkling water, club soda, or coconut water, depending on your preferred level of fizz and sweetness.
Stir gently with a long spoon to create a stunning gradient effect and combine the layers.
Step 5: Garnish and Serve
Garnish each glass with a few fresh blueberries, a sprig of fresh mint, and a thin lemon wheel resting on the rim.
Serve immediately while ice-cold and effervescent.
Pro-Tips for the Best Results
The Acid Reaction: Purple cabbage contains natural pH indicators called anthocyanins. When you add the lemon juice, you will notice the liquid instantly transform from a deep blue/purple into a brilliant, electric magenta pink. Feel free to adjust the lemon juice to play with the color intensity!
Make Ahead: You can prepare the concentrated base up to 3 days in advance and store it in a sealed glass jar in the refrigerator. When ready to serve, simply pour over ice and top with fresh sparkling water.
Herb Infusion: For an extra layer of complexity, drop a sprig of fresh rosemary or thyme into the saucepan while simmering the cabbage and blueberries.
