π« Crispy Flatbread with Brie, Cranberries & Toasted Walnuts

π§Ύ Ingredients (Serves 2β4)
For the flatbread
2 flatbreads or naan breads
1 tbsp olive oil
Toppings
120β150 g brie cheese, sliced (rind on or off β your choice)
β cup dried cranberries
β cup walnuts, roughly chopped
1 tsp fresh thyme or rosemary (optional)
Salt & black pepper, to taste
Hot Honey Drizzle
ΒΌ cup honey
Β½ tsp chili flakes (adjust to taste)
Β½ tsp apple cider vinegar or lemon juice
π©βπ³ Instructions
Toast the walnuts
Heat a dry skillet over medium heat.
Add walnuts and toast for 2β3 minutes, stirring often, until fragrant.
Remove from heat and set aside.Prepare the hot honey
In a small saucepan, gently warm honey with chili flakes over low heat for 2β3 minutes.
Remove from heat and stir in vinegar or lemon juice. Set aside.Preheat oven
Preheat to 220Β°C (425Β°F).
Place a baking tray or pizza stone inside to heat.Assemble flatbreads
Brush flatbreads lightly with olive oil.
Arrange brie slices evenly over the surface.
Sprinkle cranberries, toasted walnuts, thyme, salt, and pepper.Bake until crispy
Transfer flatbreads to the hot tray.
Bake for 8β12 minutes, until the edges are golden and crispy and the brie is melted and bubbly.Finish & serve
Drizzle generously with warm hot honey.
Slice and serve immediately.
