🫓 Crispy Flatbread with Brie, Cranberries & Toasted Walnuts
Finished with a Hot Honey Drizzle
🧾 Ingredients (Serves 2–4)
For the flatbread

2 flatbreads or naan breads

1 tbsp olive oil
Toppings

120–150 g brie cheese, sliced (rind on or off — your choice)

⅓ cup dried cranberries

⅓ cup walnuts, roughly chopped
-
1 tsp fresh thyme or rosemary (optional)

Salt & black pepper, to taste
Hot Honey Drizzle

¼ cup honey
-
½ tsp chili flakes (adjust to taste)

½ tsp apple cider vinegar or lemon juice
👩🍳 Instructions

Toast the walnuts
Heat a dry skillet over medium heat.
Add walnuts and toast for 2–3 minutes, stirring often, until fragrant.
Remove from heat and set aside. -
Prepare the hot honey
In a small saucepan, gently warm honey with chili flakes over low heat for 2–3 minutes.
Remove from heat and stir in vinegar or lemon juice. Set aside. -
Preheat oven
Preheat to 220°C (425°F).
Place a baking tray or pizza stone inside to heat. -
Assemble flatbreads
Brush flatbreads lightly with olive oil.
Arrange brie slices evenly over the surface.
Sprinkle cranberries, toasted walnuts, thyme, salt, and pepper. -
Bake until crispy
Transfer flatbreads to the hot tray.
Bake for 8–12 minutes, until the edges are golden and crispy and the brie is melted and bubbly. -
Finish & serve
Drizzle generously with warm hot honey.
Slice and serve immediately.
