Cabbage Rolls Filled with Ground Beef
Ingredients:
For the Cabbage Rolls:
* 12 large cabbage leaves (from a head of cabbage)
* 500 g ground beef (halal)
* 1 cup cooked rice
* 1 medium onion, finely chopped
* 2 garlic cloves, minced
* 1/2 cup crushed tomato or tomato puree
* 2 tablespoons fresh parsley, chopped
* 1 teaspoon ground cumin
* Salt and pepper to taste
* Olive oil
For the Sauce:
* 1 cup tomato puree
* 1 cup beef broth
* 1 tablespoon lemon juice
* Salt and pepper to taste
Instructions:
1. Prepare the cabbage leaves: Bring a large pot of salted water to a boil. Add the cabbage leaves and blanch for 2-3 minutes, or until they are soft enough to roll. Remove the leaves from the water and drain them.
2. Make the filling: In a large bowl, combine the ground beef, cooked rice, onion, garlic, crushed tomato, parsley, cumin, salt, and pepper. Mix well.
3. Assemble the cabbage rolls: Lay a cabbage leaf flat on a work surface, with the vein side facing up. Place a heaping tablespoon of the filling in the center of the leaf. Fold in the sides of the leaf, then roll up the leaf tightly, tucking in the ends. Repeat with the remaining leaves and filling.
4. Prepare the sauce: In a saucepan, combine the tomato puree, beef broth, lemon juice, salt, and pepper. Bring to a simmer and cook for 5 minutes, or until the sauce has thickened slightly.
5. Bake the cabbage rolls: Preheat your oven to 180°C (350°F). Place the cabbage rolls in a baking dish, seam side down. Pour the sauce over the rolls. Cover the dish with foil and bake for 1 hour.
6. Uncover and bake: Remove the foil and bake for an additional 30 minutes, or until the rolls are golden brown and cooked through.
7. Serve: Let the cabbage rolls rest for 10 minutes before serving.
