🫓 Crispy Flatbread with Brie, Cranberries & Toasted Walnuts

Finished with a Hot Honey Drizzle

🧾 Ingredients (Serves 2–4)

For the flatbread

  • 2 flatbreads or naan breads

  • 1 tbsp olive oil

Toppings

  • 120–150 g brie cheese, sliced (rind on or off — your choice)

  • ⅓ cup dried cranberries

  • ⅓ cup walnuts, roughly chopped

  • 1 tsp fresh thyme or rosemary (optional)

  • Salt & black pepper, to taste

Hot Honey Drizzle

  • ¼ cup honey

  • ½ tsp chili flakes (adjust to taste)

  • ½ tsp apple cider vinegar or lemon juice


👩‍🍳 Instructions

  1. Toast the walnuts
    Heat a dry skillet over medium heat.
    Add walnuts and toast for 2–3 minutes, stirring often, until fragrant.
    Remove from heat and set aside.

  2. Prepare the hot honey
    In a small saucepan, gently warm honey with chili flakes over low heat for 2–3 minutes.
    Remove from heat and stir in vinegar or lemon juice. Set aside.

  3. Preheat oven
    Preheat to 220°C (425°F).
    Place a baking tray or pizza stone inside to heat.

  4. Assemble flatbreads
    Brush flatbreads lightly with olive oil.
    Arrange brie slices evenly over the surface.
    Sprinkle cranberries, toasted walnuts, thyme, salt, and pepper.

  5. Bake until crispy
    Transfer flatbreads to the hot tray.
    Bake for 8–12 minutes, until the edges are golden and crispy and the brie is melted and bubbly.

  6. Finish & serve
    Drizzle generously with warm hot honey.
    Slice and serve immediately.
