Learn how to prepare two types of healthy, easy-to-make and delicious gluten-free cookies!

Today we are going to teach you two healthy cookie recipes, perfect for children’s snacks, as gifts or to include in your daily diet.

These are quick, easy recipes, gluten-free, low in sugar and fat, and free from chemical additives.

Oatmeal and coconut cookies

Ingredients:

  • 1 egg
  • 3 tablespoons of sugar
  • 2 tablespoons coconut oil
  • 2 tablespoons coconut milk powder
  • 1 and ¾ cups of oatmeal

Cup size: 240 ml

Preparation method:

Start by beating the egg with the sugar until well combined. Then add the coconut milk powder and coconut oil, mixing until you get a homogeneous mixture.

Now, gradually add the oat flour until the dough starts to come away from your hands. 

This dough makes a lot and is very healthy, as it contains little fat and sugar compared to industrialized cookies.

To roll out the dough, use a plastic food bag, cutting off the bottom and opening it to serve as a base. 

Place the dough inside, cover with another plastic wrap and roll out. The thinner the dough, the crispier the cookies will be.

Use cookie cutters to give the cookies fun shapes, making them appealing to children. 

Place them on a lightly greased baking sheet, as the dough has little fat and may stick.

Bake in a preheated oven at 180°C for about 10 minutes. Keep an eye on the time, as it may vary depending on the oven. 

The cookies are ready when the edges are golden brown. Remove and let them cool on a rack until they become crispy.

Then store in a closed container to maintain the texture.

Cocoa cookie

Ingredients:

  • 1 egg
  • 3 tablespoons of sugar
  • 2 tablespoons coconut oil
  • 2 tablespoons powdered milk (for lactose-free version, use powdered coconut milk)
  • ¼ cup 50% cocoa powder
  • 1 cup gluten-free flour mix

Cup size: 240 ml

Preparation method:

Mix the egg, coconut oil and sugar in a bowl until you get a homogeneous mixture. 

Then add powdered milk and good quality cocoa powder to ensure a better flavor.

Add the gluten-free flour mix little by little, mixing until the dough no longer sticks to your hands.

Roll out the dough and cut out the cookies with round cutters, which give them a shape similar to industrial cookies, making them even more attractive.

Place the cookies on a baking tray and bake in a preheated oven at 180°C for about 10 minutes. 

Once baked, transfer them to a rack to cool completely and store in a sealed container to maintain their crispiness for several days.
