Ingredients:

- 1 kg of English potatoes
- 2 eggs
- 1 teaspoon ground nutmeg
- 100g freshly grated Parmesan cheese
- 100 g breadcrumbs
- 2 cloves of minced garlic
- 300g chopped spinach
- 100 g grated mozzarella
- Salt and black pepper to taste
- Olive oil (if you don’t have any, you can use vegetable oil)
Preparation method:
Cook the potatoes with salt until tender. Then mash them and mix in the eggs, nutmeg, salt, pepper, grated Parmesan cheese, and breadcrumbs. Stir well until smooth.
In a skillet, heat the olive oil and brown the garlic. Add the chopped spinach, season with salt and pepper, and sauté until wilted. Set aside.
Line a skillet with parchment paper and brush with olive oil. Add half of the mashed potatoes and smooth over the top, ensuring an even surface.
Spread the sautéed spinach on top, sprinkle with the grated mozzarella, and cover with the remaining puree, smoothing the surface well to compact it.
Brush a drizzle of olive oil over the top, cover the skillet, and cook over low heat for 15 minutes, until golden brown on the underside. Then, flip the dish and let the other side brown.
