Ingredients:

- 3 slices of bread
- 150 ml of milk
- 2 eggs (separate the whites from the yolks)
- ½ grated sweet potato (if possible, use orange-fleshed potatoes)
- Black pepper to taste
- Chopped green onion to taste
- Salt to taste
Preparation method:
Place the bread slices in a bowl, add the milk and mash with a fork until a crumb mixture forms.
Add the egg whites to the kneaded bread, a pinch of black pepper and mix until you get a smooth paste.
Grate the sweet potato on the finest part of the grater and add to the dough. Add the chopped green onion and mix again.
Heat a dash of oil in a frying pan and add the batter in small individual portions — that is, one at a time — frying them like pancakes, until golden on both sides.
Then, place an egg yolk on each portion, season with a pinch of salt, cover the pan and let cook for another 2 to 3 minutes, until the yolk reaches the desired consistency.
Serve immediately.
