Turkish style beef liver
This is a classic recipe that combines the succulence of beef liver with the sweetness of apples and the acidity of onions.
All of this is put together in a baking dish and baked in the oven to create a harmonious and tasty dish.
Ingredients:

- 900 g beef liver
- 150 g wheat flour
- 2 apples
- 3 onions
- 8 tablespoons of oil for frying the liver, apples and onion
- 1/2 teaspoon saffron (turmeric)
- 1 teaspoon paprika
- Salt to taste
- Black pepper to taste
Preparation method:
Start by removing the film from the beef liver on both sides and then cut into thin slices.
Try to cut into rectangles approximately 4 to 5 cm long and 1 finger thick.
Cover the liver pieces with plastic wrap and pound lightly with a meat tenderizer to tenderize them.
Heat 3 tablespoons of oil in a frying pan.
Coat the liver pieces in the wheat flour, covering them completely.
Fry over medium heat until golden brown on one side, then flip and fry until golden brown on the other side. Set aside.
Wash and peel the apples, remove the seeds and cut them into pieces or slices – as you prefer.
Heat 2 tablespoons of oil in another frying pan and fry the apples on both sides over medium heat for 1 to 2 minutes until golden brown.
Remove from the pan and set aside.
Heat 2 tablespoons of oil in a frying pan, thinly slice the onions and fry them over medium heat until soft and translucent.
Season with salt, black pepper, saffron and paprika, mix well and fry for another 1 to 2 minutes.
Assembling and finishing the dish:
In a glass baking dish (a marinex type dish), place half of the fried apples on the bottom.
On top of the apples, place half of the fried liver pieces and season with salt and pepper to taste.
Add a layer of fried onions over the liver.
Repeat the process with the remaining apples, liver and onions, forming layers.
Then bake for 15 minutes in a preheated oven at 180°C.
Remove from the oven and let cool slightly before serving.
Serve this dish with white rice or baked potatoes for a complete meal.
A full-bodied red wine complements the robust flavor of the liver very well.
