- 3 large eggs
- 1 teaspoon of butter or olive oil
- 1 cup of fresh spinach
- ½ cup of shredded cheese (mozzarella, cheddar, or your preferred cheese)
- 1 tablespoon of milk (optional)
- Salt and pepper to taste
- Wash and drain the spinach.
- Beat the eggs with the milk, salt and pepper.
- In a frying pan with oil or butter, sauté the spinach for 1-2 minutes.
- Pour the beaten eggs over the spinach in the pan.
- Add the grated cheese on top.
- Fold it with a spatula and cook for another 1-2 minutes.
- Serve hot, alone or with company.
Notes
- Use well-drained frozen spinach if you don’t have fresh.
- Try different types of cheese to vary the flavor.
- Ideal with a salad or toasted bread.
