Stuffed Potatoes with Meat

 

Ingredients

  • 4 large potatoes
  • 250g of ground beef
  • ½ chopped onion
  • 1 clove of chopped garlic
  • ½ chopped red bell pepper
  • 1 teaspoon of cumin
  • 1 teaspoon of sweet paprika
  • Salt and pepper to taste
  • 1 tablespoon of chopped parsley
  • 1 egg
  • ½ cup of wheat flour
  • 1 cup of breadcrumbs
  • Frying oil

Instructions

  • Cook the potatoes in salted water until soft (20 min), then peel them and make a smooth puree.
  • In a frying pan, sauté the onion, garlic, and red pepper until tender.
  • Add the ground beef, season with salt, pepper, cumin, and paprika. Cook for 5 more minutes and add the parsley. Let cool.
  • Take a portion of mashed potato, flatten it, place a spoonful of the filling in the center and close it forming a ball.
  • Coat each ball by dipping it in flour, beaten egg, and breadcrumbs.
  • Fry in hot oil until golden brown and crispy. Place on absorbent paper.
  • Serve hot with sauce or salad.

Notes

  • To prevent stuffed potatoes from opening when frying, make sure to seal them well and refrigerate them before frying.
  • You can make a healthier version by baking them at 200°C for 25 minutes.
