🛒 Ingredients (Makes 8–10 nests)
For the Potato Nests
3 large potatoes, peeled and cubed
2 tbsp butter
¼ cup milk or cream
1 egg
½ tsp garlic powder
½ tsp black pepper
½ tsp salt
½ cup shredded mozzarella or cheddar
1 tbsp parsley (optional)
For the Filling
Choose any or mix:
Option A — Creamy Chicken Filling
1 cup cooked shredded chicken
2 tbsp cream cheese
2 tbsp mayo or sour cream
¼ tsp paprika
Salt & pepper
¼ cup mozzarella
Option B — Vegetable Filling
½ cup sautéed spinach or mushrooms
2 tbsp cream cheese
Salt & pepper
¼ cup mozzarella
Option C — Mediterranean Filling
¼ cup feta cheese
¼ cup chopped olives
2 tbsp diced tomatoes
1 tbsp parsley
Black pepper
👩🍳 Instructions
1. Make the Mashed Potatoes
Boil potatoes until soft (10–15 minutes).
Drain and mash with butter, milk, garlic powder, salt, and pepper.
Allow to cool slightly, then mix in the egg and shredded cheese.
The mixture should be thick — not runny.
2. Shape the Potato Nests
Preheat oven to 200°C / 400°F.
Grease a muffin tray.
Scoop mashed potato into each cup and press down in the center to form a nest shape.
Tip: Use the back of a spoon or your fingers.
3. Prepare the Filling
Choose your filling:
Mix chicken + cream cheese + seasoning.
OR mix veggies + cream cheese.
OR combine feta + olives + tomatoes.
Make sure it’s creamy and spoonable.
4. Fill the Nests
Add 1–2 tbsp filling into the center of each potato nest.
Top with a pinch of mozzarella or cheddar.
5. Bake
Bake for 15–20 minutes until:
Potato edges are golden
Cheese on top is melted and bubbly
