**Yields:** 6 crab cakes

**Ingredients:**
1 pound lump crab meat, picked over for shells
* 1/4 cup mayonnaise
* 1/4 cup finely chopped celery
* 1/4 cup finely chopped red bell pepper
* 1 tablespoon finely chopped green onion
* 1 teaspoon Cajun seasoning (adjust to your spice preference!)
* 1/2 teaspoon Old Bay seasoning
* 1/4 cup bread crumbs (panko recommended for extra crispness)
* 1 large egg, lightly beaten
* 2 tablespoons olive oil
**Instructions:**
**Gently combine:** In a large bowl, combine the crab meat, mayonnaise, celery, red bell pepper, green onion, Cajun seasoning, and Old Bay seasoning. Mix everything together delicately – you don’t want to break up the crab meat too much.
2. **Add binder:** Stir in the bread crumbs and the beaten egg until just combined. Don’t overmix!
3. **Form patties:** Shape the mixture into 6 equal-sized patties.
4. **Cook the cakes:** Heat the olive oil in a large skillet over medium heat. Carefully place the crab cakes in the skillet and cook for about 4-5 minutes per side, or until golden brown and heated through. Be gentle when flipping!
