Seared Salmon & Veggie Power Bowl with Soba Noodles
This hearty and nourishing bowl brings together perfectly seared salmon, sautéed asparagus and mushrooms, fluffy scrambled eggs, sweet blistered tomatoes, and a refreshing side of soba noodles. Packed with protein, fiber, and healthy fats this is clean eating at its finest!
𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬:
Main Bowl:
1 salmon fillet
Salt & cracked black pepper
1 tsp olive oil or avocado oil
5–6 asparagus spears, trimmed
4–5 whole button mushrooms
½ cup cherry tomatoes
2 large eggs
Salt & pepper to taste
Optional: garlic or chili flakes for veggies
On the Side:
½ cup cooked soba noodles
Coconut water (optional beverage pairing)
𝐃𝐢𝐫𝐞𝐜𝐭𝐢𝐨𝐧𝐬:
Sear the Salmon
Season the salmon with salt and black pepper. Heat oil in a non-stick skillet over medium-high heat. Cook salmon skin-side down for 3–4 minutes, flip, and cook another 2–3 minutes until golden and cooked through.
Sauté the Veggies
In the same pan, lightly sauté asparagus and mushrooms until tender (about 4–5 minutes). Add cherry tomatoes and let them blister and soften, about 2 more minutes. Season with salt, pepper, and garlic or chili flakes if desired.
Make the Scrambled Eggs
Whisk eggs with a pinch of salt. In a separate pan, cook over medium-low heat, stirring gently until just set and fluffy.
Cook Soba Noodles
Prepare noodles according to package instructions. Rinse with cold water and drain. Optionally drizzle with a bit of sesame oil or soy sauce.
Assemble the Bowl
Layer asparagus, mushrooms, tomatoes, scrambled eggs, and salmon in a deep bowl. Serve soba noodles on the side and enjoy with a refreshing coconut water.
