Recipe for Milanese-style breaded cutlets

 

Ingredients

 

  • 4 beef or chicken fillets
  • 2 eggs
  • 1 cup of breadcrumbs
  • 1/2 cup of wheat flour
  • 1 cup of tomato sauce
  • 200g of cooked ham
  • 200g of mozzarella cheese
  • Salt and pepper to taste
  • Dried oregano to taste
  • Frying oil

Instructions

  1. Season the fillets with salt and pepper on both sides.
  2. Coat them in flour, then in beaten egg, and finally in breadcrumbs. Press down to ensure the breading adheres well.
  3. Fry the breaded cutlets in hot oil until golden brown. Drain on paper towels.
  4. Place on a baking tray, cover each breaded cutlet with tomato sauce, ham and cheese.
  5. Sprinkle with oregano and bake at 200°C for 10–15 minutes until golden brown.
  6. Serve hot with your choice of side dish.

Notes

  • Chicken fillets can be used for a lighter version.
  • Panko-type breadcrumbs improve the crispy texture.
  • To freeze, do so before the final baking.
