Wheat-free, egg-free and dairy-free, this delight is perfect for those following a low-carb diet or simply wanting to enjoy something light and nutritious. 

The best part is that, besides being super practical, you can customize the filling according to your preferences. Let’s go step by step!

Ingredients:

  • 200 g chicken breast
  • 200 g grated mozzarella

Preparation method:

Cook the chicken breast in salted water until well cooked. Let it cool a little and dry it with paper towels.

Grind the chicken in a food processor or blender until it has a flour-like texture (very fine).

Then, melt the grated mozzarella in the microwave for a few seconds. If you don’t have a microwave, do this process in a bain-marie.

In a bowl, mix the shredded chicken with the melted mozzarella. Knead with your hands until you form a firm dough, similar to bread.

Take a piece of dough, place it on plastic or parchment paper and roll it out with a rolling pin. If you don’t have one, use a bottle or cylindrical object. The dough should be warm; if it cools down, heat it up a little in the microwave.

Cut the dough into discs and fill with the ingredients of your choice, such as chopped tomatoes, olives and hearts of palm. Close the pastries by pressing the edges with a fork.

Place the pastries on a baking tray, brush with egg yolk and bake in a preheated oven at 180°C for 20 minutes, or until golden.

After baking, remove from the oven and let cool a little. Serve and enjoy this delicious treat with just two ingredients and zero carbs!
