Mushrooms with Garlic – Tastier than Meat!

 

Ingredients

Main Ingredients
  • 400 g mushrooms, whole or halved Any type of mushrooms can be used.
  • 700 g potatoes, peeled and diced
  • 30 g butter Can be substituted with plant-based butter for a dairy-free option.
  • Olive oil Olive oil for frying
  • Salt Salt, to taste
  • 2 onions, sliced
  • Potato seasoning Potato seasoning, to taste
  • 2 garlic cloves, minced
  • Fresh parsley, chopped For garnish
  • Fresh dill, chopped For garnish

Method

Preparation
  1. In a large pot, bring salted water to a boil and add the diced potatoes. Cook them until they’re just tender, then drain well.
  2. Heat some olive oil in a large pan over medium-high heat. Add the cooked potatoes and fry until they’re golden and crisp. Once done, remove them from the pan and set them aside.
  3. In the same pan, add butter. Once melted, throw in the mushrooms. Fry them until they’re browned and their moisture has evaporated.
  4. Add the sliced onions to the pan and cook until they’re soft and caramelized, stirring occasionally.
  5. Toss in the minced garlic and keep stirring until fragrant, which will only take about a minute.
  6. Return the crispy potatoes to the pan. Season with salt and your choice of potato seasoning, then toss everything together so that it’s well coated.
  7. Cook for another few minutes until everything is hot and combined.
  8. Remove from heat and sprinkle with fresh parsley and dill before serving.

Notes

Storage: Store any leftovers in an airtight container in the fridge for up to 3 days. Reheat in a skillet for the best texture. Flavor Variations: Add in some bell peppers or spinach for extra veggies. A splash of lemon juice can brighten up the flavors wonderfully!
