Ingredients:

For the Quinoa Salad:

1 cup cooked quinoa

1 cup cherry tomatoes, halved

½ cucumber, diced

¼ cup red onion, finely chopped

¼ cup crumbled feta cheese

2 tbsp chopped parsley

2 tbsp olive oil

1 tbsp lemon juice

Salt & black pepper, to taste

For the Mezze Board:

Hummus

Tzatziki or garlic yogurt sauce

Kalamata olives

Roasted red peppers

Pita bread or flatbreads, cut into wedges

Grilled halloumi or falafel (optional)

Fresh herbs and lemon wedges for garnish

Directions:

Prepare the quinoa salad: combine quinoa, tomatoes, cucumber, onion, feta, and parsley in a bowl. Drizzle with olive oil and lemon juice, season with salt and pepper, and toss to coat.

Arrange the board: place small bowls of hummus and tzatziki on a large serving board.

Add the quinoa salad and arrange olives, roasted peppers, pita wedges, and grilled halloumi or falafel around it.

Garnish with herbs and lemon wedges for a bright, fresh finish.

Serve immediately — perfect for sharing or a light summer meal.
