Mediterranean Ground Beef Stir Fry
Ingredients:
1 lb ground beef
1 tbsp olive oil
1 small onion, diced
3 cloves garlic, minced
1 bell pepper (any color), chopped
1 zucchini, sliced or diced
1 cup cherry tomatoes, halved
½ cup Kalamata olives, sliced
1 tsp dried oregano
½ tsp ground cumin
½ tsp smoked or sweet paprika
Salt and pepper to taste
¼ cup feta cheese, crumbled
Fresh parsley, chopped, for garnish
Directions:
Heat olive oil in a large skillet over medium heat. Once shimmering, add the diced onion and minced garlic. Sauté for 2–3 minutes until soft and aromatic.
Add the ground beef, breaking it apart with a wooden spoon. Cook until browned and fully cooked through, about 5–7 minutes.
Stir in the bell pepper, zucchini, and cherry tomatoes. Cook for another 5–7 minutes until the vegetables are just tender but still vibrant.
Season with oregano, cumin, paprika, salt, and pepper. Mix thoroughly to coat everything in those warm, earthy spices.
Add the Kalamata olives and stir everything together. Let it cook for another 2 minutes so the flavors can mingle.
Turn off the heat, then sprinkle the crumbled feta cheese over the top. Garnish with fresh parsley just before serving.
Serve hot, either on its own, over fluffy rice or quinoa, or tucked into warm pita bread for a hearty wrap-style meal.
