Mediterranean Dark Chocolate Date Bites

Ingredients


1 cup Medjool dates (pitted)

1/2 cup chopped pistachios or almonds

1 tbsp olive oil or coconut oil

1/2 tsp cinnamon

A pinch of sea salt

1 cup dark chocolate chips (70% cocoa or higher)

1 tsp honey or pure maple syrup (optional)



Instructions



Prepare the Filling
In a food processor, blend the pitted dates, pistachios (or almonds), olive oil, cinnamon, sea salt, and honey if using. Process until the mixture becomes thick and sticky but still a bit chunky.

Form the Bites
Roll the mixture into small balls or press it into silicone molds (for a smooth shape like in the photo). Place them in the freezer for 15–20 minutes to firm up.

Melt the Chocolate
In a heat-safe bowl, melt the dark chocolate over simmering water (double boiler method) or microwave it in 20-second intervals, stirring each time until smooth.

Coat the Bites
Dip each chilled date bite into the melted chocolate, coating evenly. Place them on parchment paper or in the molds again.

Chill and Set
Refrigerate for 30–40 minutes until the chocolate hardens completely.

Serve
Once set, remove from the fridge and enjoy these rich Mediterranean-style chocolate bites.

Serving Tip

Serve with espresso or mint tea. For an extra Mediterranean touch, sprinkle crushed pistachios or a pinch of flaky sea salt on top before the chocolate sets.
