Ingredients
For the Pastry:
1 sheet puff pastry (thawed if frozen)
1/2 cup cherry preserves or pitted sweet cherries (finely chopped)
1/4 cup finely chopped almonds
1 tsp almond extract
1 tbsp honey
1 egg (beaten, for brushing)
For the Glaze:
1/2 cup powdered sugar
1 tbsp milk or lemon juice
A few whole cherries for garnish
Instructions
Prepare the Filling
In a small bowl, mix the cherry preserves (or chopped cherries) with chopped almonds, almond extract, and honey. Stir until blended and slightly thick.
Shape the Pastries
Roll out the puff pastry on a lightly floured surface and cut it into squares. Place a small spoonful of the cherry-almond mixture in the center of each square.
Fold each one into a crescent or triangle shape, sealing the edges gently.
Brush and Bake
Place the pastries on a parchment-lined baking sheet. Brush each one with the beaten egg for a golden finish.
Bake in a preheated oven at 375°F (190°C) for 15–18 minutes, or until puffed and golden brown.
Add the Glaze
Mix powdered sugar with milk or lemon juice until smooth. Once the pastries have cooled slightly, drizzle the glaze over them.
Garnish and Serve
Top each pastry with a cherry for decoration. Serve warm or at room temperature.
