Ingredients
1 lb (450 g) lean ground beef or lamb
2 tbsp olive oil
1 medium onion, diced
2 cloves garlic, minced
2 medium zucchinis, diced
1 yellow bell pepper, chopped
1 can (14 oz) diced tomatoes
1 tsp dried oregano
1/2 tsp ground cumin
1/2 tsp paprika
Salt and black pepper to taste
A handful of chopped parsley or basil for garnish
Optional: a sprinkle of grated Parmesan or feta cheese on top
Instructions
Cook the Beef
Heat the olive oil in a large skillet over medium heat. Add the diced onion and sauté until translucent. Add the minced garlic and cook for another 30 seconds until fragrant.
Add the ground beef (or lamb) and cook until browned, breaking it apart with a spoon as it cooks. Drain any excess fat if needed.
Add Vegetables and Spices
Stir in the zucchini and bell pepper. Cook for about 5 minutes until they start to soften. Add oregano, cumin, paprika, salt, and pepper. Mix well to coat the beef and vegetables with the seasonings.
Simmer with Tomatoes
Pour in the diced tomatoes (with their juices). Stir everything together, lower the heat, and let it simmer uncovered for about 10–15 minutes until the sauce thickens and the vegetables are tender.
Finish and Serve
Taste and adjust seasoning. Sprinkle fresh parsley or basil before serving. If you like, add a touch of grated cheese on top for extra richness.

Serve this dish with warm pita bread, couscous, or over a bed of rice. It also pairs perfectly with a simple cucumber and yogurt salad for a complete Mediterranean meal.
