Marinated Cucumbers, Onions, and Tomatoes, a delicious, light, and refreshing salad that is perfect for summer or winter. What I love about this recipe is that you can serve with chicken or any main dishes you want !!

Ingredients:

  • 2 medium cucumbers, peeled and sliced

  • 2 medium tomatoes, cut into wedges or chunks

  • 1 small red or yellow onion, thinly sliced

  • ½ cup white vinegar (or apple cider vinegar for a sweeter taste)

  • ¼ cup water

  • 2 tablespoons olive oil

  • 1 tablespoon sugar (adjust to taste)

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • 1 teaspoon dried oregano or Italian seasoning (optional)

  • Fresh herbs like parsley or dill (optional)

Instructions:

  1. Prepare the Vegetables:

    • Slice cucumbers into rounds (or half-moons if thick).

    • Cut tomatoes into wedges or bite-size pieces.

    • Thinly slice the onion.

  2. Make the Marinade:

    • In a large bowl or jar, mix vinegar, water, olive oil, sugar, salt, pepper, and oregano.

    • Stir well until the sugar and salt dissolve.

  3. Combine and Marinate:

    • Add the sliced cucumbers, tomatoes, and onions to the bowl.

    • Toss gently to coat the vegetables evenly in the marinade.

  4. Chill:

    • Cover and refrigerate for at least 1 hour (ideally 3–4 hours) for the best flavor.

    • Stir occasionally to ensure even marinating.

  5. Serve:

    • Garnish with fresh herbs if desired.

    • Serve cold as a side dish or salad.

Tips:

  • Tastes even better the next day!

  • Can be stored in the fridge for up to 3–4 days.

  • Great with grilled meats, sandwiches, or Southern dishes.
