Marinated Cucumbers, Onions, and Tomatoes
Marinated Cucumbers, Onions, and Tomatoes, a delicious, light, and refreshing salad that is perfect for summer or winter. What I love about this recipe is that you can serve with chicken or any main dishes you want !!
Ingredients:
2 medium cucumbers, peeled and sliced
2 medium tomatoes, cut into wedges or chunks
1 small red or yellow onion, thinly sliced
½ cup white vinegar (or apple cider vinegar for a sweeter taste)
¼ cup water
2 tablespoons olive oil
1 tablespoon sugar (adjust to taste)
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon dried oregano or Italian seasoning (optional)
Fresh herbs like parsley or dill (optional)
Instructions:
Prepare the Vegetables:
Slice cucumbers into rounds (or half-moons if thick).
Cut tomatoes into wedges or bite-size pieces.
Thinly slice the onion.
Make the Marinade:
In a large bowl or jar, mix vinegar, water, olive oil, sugar, salt, pepper, and oregano.
Stir well until the sugar and salt dissolve.
Combine and Marinate:
Add the sliced cucumbers, tomatoes, and onions to the bowl.
Toss gently to coat the vegetables evenly in the marinade.
Chill:
Cover and refrigerate for at least 1 hour (ideally 3–4 hours) for the best flavor.
Stir occasionally to ensure even marinating.
Serve:
Garnish with fresh herbs if desired.
Serve cold as a side dish or salad.
Tips:
Tastes even better the next day!
Can be stored in the fridge for up to 3–4 days.
