Loaded Spicy Chicken & Potato Stir-Fry with Garlic Rice

Ingredients
For the Stir-Fry:
1 lb (450g) chicken breast or thighs, cut into bite-size pieces
3 medium potatoes, peeled and cubed small
1 red bell pepper, sliced
1 onion, sliced
3 cloves garlic, minced
2 tbsp soy sauce
1 tbsp oyster sauce (or hoisin for sweeter flavor)
1 tbsp chili paste (or sriracha, to taste)
1 tsp smoked paprika
½ tsp chili flakes (optional for extra heat)
2 tbsp olive oil (or sesame oil for more flavor)
Salt & black pepper, to taste
2 tbsp green onions or cilantro, chopped (for garnish)
For the Garlic Rice:
2 cups cooked rice (jasmine, basmati, or brown)
2 cloves garlic, minced
1 tbsp butter or olive oil
Pinch of salt
Instructions
Cook Potatoes
In a skillet, heat 1 tbsp oil. Pan-fry potato cubes until golden and crispy on the outside, tender inside (8–10 minutes). Remove and set aside.
Cook Chicken
In the same skillet, add remaining oil. Sear chicken pieces until golden and cooked through (6–7 minutes). Season with paprika, salt, and pepper. Remove and set aside.
Sauté Veggies
Add onion, bell pepper, and garlic to the skillet. Stir-fry 3–4 minutes until softened.
Combine & Sauce
Return chicken and potatoes to the skillet.
Stir in soy sauce, oyster sauce, chili paste, and chili flakes. Toss until everything is coated and heated through.
Make Garlic Rice
In a pan, melt butter or heat olive oil. Sauté garlic until fragrant.
Add cooked rice, stir well, and season with a pinch of salt.
Serve
Plate garlic rice, top with spicy chicken & potato stir-fry, and garnish with green onions or cilantro.
