    • 1 kg of eggplants (prefer the smaller ones)
    • 200 g of sliced ​​cooked ham
    • 200 g sliced ​​cheese (whatever you prefer)
    • 100 g homemade tomato sauce
    • 3 free range eggs
    • 200 ml whole milk
  • 50 g grated parmesan cheese
  • Dried oregano to taste
  • Dried basil to taste
  • Extra virgin olive oil
  • Ground black pepper

      1. Prepare the Eggplants:
        • Wash the eggplants well and cut them into slices approximately 3 mm thick.
        • Place the slices in a bowl of salted water for about 20 minutes, using a weight to keep them submerged.
