Korean Zucchini Side Dish (Hobak Namul)

 

 

Ingredients

Main Ingredients
  • 1 medium zucchini (either Korean or North American variety)
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon sugar
  • 1 teaspoon fish sauce
  • 1 teaspoon Korean red pepper flakes
  • ½ teaspoon salt
  • 1 green onion sliced finely

Method

Preparation
  1. Cut the ends off your zucchini.
  2. Slice it in half lengthwise, then cut it into thin discs.
  3. Place the zucchini in a colander or bowl and sprinkle ½ teaspoon of salt over it.
  4. Leave it for 10 minutes.
  5. Using paper towels, wipe off the salt and squeeze the zucchini firmly to get rid of excess water.
Cooking
  1. Heat sesame oil on a skillet over medium-high heat.
  2. Add the zucchini and stir-fry for around 5 minutes until softened.
  3. Cook longer if necessary.
  4. Add garlic, green onion, fish sauce, sugar, and red pepper flakes.
  5. Stir-fry for an additional minute.
  6. Remove from heat and allow to cool.
  7. Serve at room temperature or chilled.

Notes

Hobak Namul is popular for its simplicity and versatility, making it a great side dish for Korean meals. For an extra crunch, consider tossing in fresh sesame seeds before serving. This dish can be served chilled, perfect for summer meals.
