Korean Zucchini Side Dish (Hobak Namul)

Preparation
- Cut the ends off your zucchini.
- Slice it in half lengthwise, then cut it into thin discs.
- Place the zucchini in a colander or bowl and sprinkle ½ teaspoon of salt over it.
- Leave it for 10 minutes.
- Using paper towels, wipe off the salt and squeeze the zucchini firmly to get rid of excess water.
Cooking
- Heat sesame oil on a skillet over medium-high heat.
- Add the zucchini and stir-fry for around 5 minutes until softened.
- Cook longer if necessary.
- Add garlic, green onion, fish sauce, sugar, and red pepper flakes.
- Stir-fry for an additional minute.
- Remove from heat and allow to cool.
- Serve at room temperature or chilled.

Hobak Namul is popular for its simplicity and versatility, making it a great side dish for Korean meals. For an extra crunch, consider tossing in fresh sesame seeds before serving. This dish can be served chilled, perfect for summer meals.
