Ingredients:

- 1 eggplant
- 2 eggs
- Salt and black pepper to taste
- Green herbs to taste (parsley, chives and/or coriander)
- A trickle of oil
- Tomato sauce –Â
- Grated mozzarella to taste
- Thyme to taste (you can use oregano and/or basil)
Preparation method:
Grate the eggplant, properly cleaned, on the thickest part of the grater.
Place in a sieve, add a pinch of salt, mix and let sit for 10 minutes to remove all excess water.
Beat the two eggs and season with pepper and salt, add the grated eggplant, chives and mix.
Tip:Â You can also use other seasonings of your choice.Â
Then heat a pan with a dash of oil and pour the mixture evenly.Â
Cook over low heat with the lid closed for about 10 minutes, until the underside is golden brown.Â
Turn the dough over, spread the tomato sauce, sprinkle the grated cheese on top and the thyme.
You can substitute with oregano and/or basil – if you prefer, you can add all three herbs.
Cover and cook for another 5 minutes, until the cheese melts.
Serve immediately!
