Well, today, we have the perfect solution for you: an incredible banana cake, made with just 1 egg and 2 bananas, wheat-free and lactose-free.Â
Besides being easy to prepare, it’s super fluffy and delicious, making use of that stash of ripe bananas left over in the fruit bowl. Let’s get to the recipe!
Ingredients:

- 1 egg
- ½ cup sugarÂ
- 2 ripe bananasÂ
- ¼ cup plant-based milk
- ¼ cup vegetable oil
- 1 cup cornstarch (Maizena type)
- 1 tablespoon of baking powder (Royal type)
- Ground cloves or cinnamon (optional)
Preparation method:
Crack the egg and separate the white from the yolk. In a bowl, beat the egg white until fluffy (you can beat it with a fork).
In a bowl, mash the two bananas with a fork until they are well mashed, but not completely smooth, leaving some small pieces.
In another bowl, combine the egg yolk, oil, and plant-based milk. Mix well.
Add the sugar, cornstarch, and mashed bananas. Mix until smooth.
Add the baking powder and stir gently. If you want to add cinnamon or ground cloves, now’s the time!
Carefully fold the beaten egg white into the batter. Stir slowly to maintain a light consistency.
Place the batter in a greased pan and bake in a preheated oven at 180ºC for about 30 to 40 minutes, or until the cake is golden brown and a toothpick inserted into the center comes out clean.
Let the cake cool slightly before unmolding. Then, simply slice and serve.
