- 3 eggs
- 50g grated cheese (use your favorite)
- Salt and black pepper to taste

Start by cutting the eggplants into slices approximately 1 cm thick.
Sprinkle salt over them and let them rest for about 5 to 10 minutes to reduce the vegetable’s natural bitterness.
Then, arrange the slices on a baking sheet lined with parchment paper.
Brush with olive oil and bake in a preheated oven at 200°C for 15 minutes until they begin to cook.
