Preparation
- Preheat the oven to 175°C (350°F). Line a 28 x 19 cm (11 x 7.5 inch) baking dish with parchment paper.
- In a large bowl, add the eggs, salt, vanilla extract, and sugar. Whisk until the mixture becomes light, creamy, and fluffy.
- Gradually add the oil while mixing, followed by the orange zest and orange juice.
- Pour in the milk and mix until well combined.
- Add the desiccated coconut and stir gently.
- Sift the flour and baking powder together, then add to the batter in two batches, folding gently until smooth.
- Pour the batter into the prepared baking dish and level the surface.
Baking
- Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.
- While the cake is still warm, drizzle honey over the top.
- Sprinkle with desiccated coconut and chopped pistachios.
- Allow the cake to cool slightly, slice, and serve.
