Ingredients:

    • 3 eggs
    • 600 g cabbage
    • 500 ml of water
    • 1/2 cup uncooked rice
    • 1 cup of hot water
    • 3 tablespoons of butter 
    • 2 medium onions, chopped
    • 1 large grated carrot without skin
    • 2 cloves of minced garlic
    • 1 tablespoon of dried mixed herbs (thyme, rosemary, oregano and parsley)
    • 500 g ground beef
    • 1/2 tablespoon paprika
    • Salt to taste
    • Black pepper to taste
    • Chopped parsley to taste
    • Vegetable oil for frying
  • Wheat flour for breading

For the hot sauce:

    • 3 tablespoons of butter
    • 2 tablespoons of wheat flour
    • 2 tablespoons of tomato sauce – you can use this homemade version that we teach here
    • 2 cups of water
    • 3 bay leaves
    • 1 teaspoon salt
  • 1/2 teaspoon dried garlic
  • 1/2 teaspoon dried onion
  • Black pepper or calabresa to taste

Refreshing sauce:

  • 4 tablespoons of cream
  • 1 clove of grated garlic
  • Green smell to taste
  • Salt to taste

Step by step preparation:

Beat the eggs with a pinch of salt using a fork or whisk.

Finely chop the cabbage and place in a large pan with 500 ml of water and salt to taste.

Cover and bring to a boil. Cook for another 10 minutes.

In another pan, place the rice with half a teaspoon of salt and 1 cup of hot water.

Cover and cook for 10 minutes. Then place on a plate to cool.

Melt the butter in a large skillet. Sauté the chopped onion until translucent. Add the grated carrot and sauté until soft.

Season with chopped garlic and fine herbs, mixing well. Remove and let cool.

Drain the water from the cabbage and let it cool.

In a container, place the ground meat, season with salt and black pepper and mix well with your hands.

Add the carrot and onion mixture, the rice and mix everything together. Add the chopped chives, paprika and cabbage, mixing again. Pour in the beaten eggs and mix with your hands.

Shape the mixture into ‘burgers’, but slightly longer and flatter

Coat in wheat flour and fry in a frying pan with very little oil, browning on both sides.

  • Note: You don’t need to deep fry, ok? You can use 4 to 5 tablespoons of vegetable oil.

Hot sauce:

Melt the butter in a small saucepan, add the wheat flour and mix well, cooking for one minute.

Add the tomato sauce and stir. Then add half of the water (1 cup) and continue stirring to avoid lumps forming.

When it is creamy, add the remaining water (1 cup) and stir to make it more liquid. Also add the bay leaves.

Season with dried garlic and onion, salt and black pepper (or calabresa) to taste. Cook for 2 to 3 minutes, stirring constantly.

Finishing the dish:

Place the fried ‘burgers’ on a baking tray, pour the sauce over the top and bake in a preheated oven at 180°C for 25 to 30 minutes.

Serve with the refreshing sauce: mix the cream, chopped chives, grated garlic and salt to taste.

  • Suggestion: The sauces are optional. If you don’t like them or don’t want to make them, you can leave them out.
