Melt-in-your-mouth Turkish bread made overnight and baked in the morning for a delicious and convenient breakfast.
This recipe is perfect for breakfast or an afternoon snack.
Made with dry yeast, it results in soft, tasty and easy-to-prepare buns.
The filling can vary — cheese, olives, or even simple versions without filling.
Ingredients:
For the dough:

- 125 g softened butter
- 1/2 cup oil
- 1 cup of warm milk
- 1 egg white (reserve the yolk for brushing)
- 1/2 cup plain yogurt
- 1 tablespoon of sugar
- 1 teaspoon of salt
- 1 tablespoon dry instant yeast
- 4 cups of wheat flour (approximately)
For the filling:
- Grated or shredded cheese (mozzarella or white)
For the topping:
- 1 egg yolk
- Sesame to taste
Preparation method:
In a bowl, combine the dry yeast, sugar, and warm milk. Let it sit for a few minutes until it begins to foam, a sign that the yeast is active.
Add the oil, yogurt, egg white, and softened butter. Mix well until smooth.
Gradually add the flour, along with the salt, and knead until you obtain a soft dough that no longer sticks to your hands.
Cover the dough with a cloth and let it rest for about 30 minutes, until it rises well.
After fermentation, remove the air from the dough and divide it into 10 equal portions.
Open each portion with your hands, place a little cheese in the center and close, shaping it into a ball or oval shape.
Place the rolls on a baking sheet lined with parchment paper. Cover with a clean towel and let rise for another 15 minutes.
Brush the buns with egg yolk and sprinkle sesame seeds on top. Make light slashes in the top with a knife if desired.
Place in a preheated oven at 180°C (with heat on top and bottom) and bake until golden brown.
Tip
You can vary the filling by adding olives, ham, sun-dried tomatoes, or leave them plain. They’re still delicious!
