Healthy Turkey with Sweet Potato Mash & Avocado Spinach Salad

Ingredients:
For the Turkey:
1 lb ground turkey (93% lean)
1/4 cup breadcrumbs (or almond flour for low-carb)
1 egg
2 cloves garlic, minced
1 tbsp fresh parsley, chopped
1 tsp onion powder
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp paprika
1 tbsp olive oil (for cooking)
For the Sweet Potato Mash:
1 large sweet potato, peeled and cubed
1 tbsp butter or coconut oil
1/4 cup milk (or dairy-free alternative)
1/2 tsp cinnamon (optional)
1/2 tsp salt
For the Avocado Spinach Salad:
2 cups fresh spinach
1/2 avocado, diced
1/2 cup cherry tomatoes, halved
1 tbsp olive oil
1 tsp lemon juice
1/4 tsp salt
1/4 tsp black pepper
Step by Step:
Make the Turkey :
In a bowl, mix ground turkey, breadcrumbs, egg, garlic, parsley, onion powder, salt, black pepper, and paprika.
Form into patties and set aside.
Heat olive oil in a pan over medium heat.
Cook burgers for 5-6 minutes per side until fully cooked.
Prepare the Sweet Potato Mash:
Boil sweet potatoes in salted water for 15 minutes until fork-tender.
Drain and mash with butter, milk, cinnamon (optional), and salt until smooth.
Make the Avocado Spinach Salad:
In a bowl, combine spinach, diced avocado, and cherry tomatoes.
Drizzle with olive oil and lemon juice, then season with salt and black pepper.
Toss gently to coat.
Assemble & Serve:
Plate the turkey with mashed sweet potatoes and avocado spinach salad on the side.
