Homemade rice bread

Ingredients:

    • 480 g cooked rice (leftovers from a meal)
    • 600 g wheat flour (approximately)
    • 2 eggs
    • 120 ml of oil
    • 240 ml warm milk
  • 3 tablespoons of sugar
  • 1 tablespoon of dry biological yeast

Preparation method:

In a blender, place the eggs, oil, warm milk, sugar, dry yeast and cooked rice.

Beat until smooth and then transfer to a large bowl.

Gradually, start adding the wheat flour, mixing well with a spoon until the dough starts to thicken.

When the dough is heavy, remove the spoon and start kneading with your hands.

Continue adding flour until the dough comes away from your hands and the bowl.

The amount of flour can vary, but generally around 600 g is needed.

Sprinkle flour on the counter (or table), place the dough and knead well for approximately 10 minutes, until it is smooth.

Shape the dough into a ball, place it back in the bowl, cover and let it rise for about 40 minutes, or until it doubles in size.

After the first fermentation, sprinkle some flour on the counter and place the dough on it.

Divide in half and roll out each half to form a rectangle.

Roll the dough gently, forming the loaves, place them in greased and floured pans.

Cover with a cloth and let rest for another 30 minutes, or until doubled in size.

Preheat the oven to 180 degrees, brush the bread with egg yolk and make a few cuts on the surface to prevent them from tearing while baking.

Place the individual shapes inside a larger shape.

Bake for approximately 40 minutes, or until the bread is golden brown.

Remove the breads from the oven and let them cool slightly before serving.

This homemade rice bread stays fluffy for several days and is perfect for any occasion.
