Gluten free mini French bread

Ingredients:

    • 180 g rice flour
    • 70 g sweet cassava starch
    • 40 g cornstarch
    • 40 g potato starch
    • 10 g sugar
    • 5 g of salt
  • 5 g baking powder (cake yeast)
  • 6 g xanthan gum
  • 7 g dry yeast
  • 1 egg
  • 50 ml oil or butter
  • 350 ml of warm water
  • White sesame to taste

Preparation method:

In a large bowl or stand mixer, mix all dry ingredients.

Add the egg to the dry mixture, half of the water and mix a little.

Gradually add the remaining water while continuing to mix.

Add the oil (or butter) and continue beating until you obtain a creamy, light dough.

Grease a cheese bread or cupcake pan with butter and, using a spoon, place small portions of the dough into the pan.

Lightly wet the spoon with water and smooth out each portion of modeling dough.

Sprinkle white sesame seeds over each bun, cover with plastic wrap and let rest for about 1 hour.

Using a wet knife, make a small cut on the surface of each bread.

Bake the rolls in a preheated oven at 200°C for 30 minutes.

After 15 minutes in the oven, spray a little water on the buns to help form a crispy crust.

Remove from the oven, let cool slightly and serve. Enjoy!
