Ingredients:
- 3 eggs
- 3 tablespoons melted butter (or margarine)
- 1/2 teaspoon salt
- 3 tablespoons grated parmesan cheese (optional)
- 1 cup of sour cassava starch
- 1 cup tapioca flour
Preparation method:
In a bowl, place the eggs and melted butter. Mix well. Add the salt and continue stirring.
Add the grated parmesan cheese (if using, but it gives a special flavor) and mix again. Add the sour cassava starch and mix well until incorporated.
Now, add the tapioca flour. Mix everything until you get a homogeneous dough.
Note:Â If the eggs are small and the dough is too firm, add a little water until it reaches the ideal consistency.
Since we are using sour cassava starch together with tapioca, it is not necessary to add yeast, as the cassava starch already helps it to rise.
Grease and flour (with tapioca flour or tapioca) a pan and pour in the batter.
Bake in a preheated oven at 180°C for about 45 minutes or until golden.
Once baked, just unmold. The cake will have a crispy crust on the outside and a very fluffy inside. Delicious!
