Ingredients:
For the pork chops:
4 bone-in pork chops
2 tablespoons butter
1 tablespoon olive oil
3 cloves garlic, minced
1 teaspoon smoked paprika
1 teaspoon dried thyme
Salt and black pepper to taste
Chopped parsley for garnish
For the creamy potato bake:
4 medium potatoes, peeled and diced
1 cup heavy cream
1/2 cup whole milk
1/2 small onion, finely chopped
1 teaspoon garlic powder
1/2 teaspoon ground nutmeg
1 cup shredded cheddar or Gruyère cheese
Salt and black pepper to taste
Instructions:
1. Preheat oven to 375°F. Lightly grease a large oven-safe baking dish.
2. Boil the diced potatoes in salted water for 8–10 minutes, until just fork-tender. Drain and set aside.
3. In a small saucepan, heat the cream, milk, chopped onion, garlic powder, nutmeg, salt, and pepper over medium heat. Simmer for 3–4 minutes, then remove from heat.
4. Add the boiled potatoes to one side of the prepared baking dish. Pour the cream mixture over the potatoes and sprinkle with shredded cheese.
5. Season pork chops with paprika, thyme, salt, and pepper.
6. In a skillet over medium-high heat, heat olive oil and sear pork chops for 2–3 minutes per side until golden brown.
7. Reduce heat to medium, add butter and garlic to the skillet, and spoon the melted garlic butter over the chops for 1–2 minutes.
8. Place the seared pork chops next to the potatoes in the baking dish. Drizzle any leftover garlic butter from the skillet over the top.
9. Bake for 20–25 minutes, until the pork reaches 145°F internally and the potatoes are bubbling and golden.
10. Let rest for 5 minutes, garnish with fresh parsley, and serve.
Pro tip: For extra crispiness, broil the dish for the last 2–3 minutes, keeping a close eye.
