🧁 French Toast Muffins Recipe

Ingredients (Makes 12 muffins)

  • 6 cups cubed bread (day-old brioche, challah, or French bread works best)
  • 4 large eggs
  • 1 ½ cups milk (whole, almond, or oat milk)
  • ½ cup heavy cream (or extra milk)
  • ½ cup brown sugar (or coconut sugar)
  • 2 tsp vanilla extract
  • 1 tsp ground cinnamon
  • ¼ tsp nutmeg (optional)
  • Pinch of salt
  • 2 tbsp melted butter (plus more for greasing)

Optional Toppings

  • Powdered sugar
  • Maple syrup
  • Fresh berries
  • Chopped nuts
  • Streusel topping (butter + brown sugar + flour + cinnamon)

Instructions

1. Prep the Bread

  • Cut bread into 1-inch cubes. If it’s too fresh, toast the cubes lightly so they don’t get soggy.
  • Place them in a large mixing bowl.

2. Make the Custard

  • In another bowl, whisk together eggs, milk, cream, brown sugar, vanilla, cinnamon, nutmeg, salt, and melted butter until smooth.

3. Soak the Bread

  • Pour the custard over the bread cubes.
  • Gently toss until all bread pieces are coated.
  • Let sit for 10 minutes to soak up the mixture.

4. Bake

  1. Preheat oven to 350°F (175°C).
  2. Grease a 12-cup muffin tin with butter or non-stick spray.
  3. Divide the soaked bread mixture evenly into the muffin cups, pressing down lightly.
  4. (Optional: Sprinkle streusel or chopped nuts on top.)
  5. Bake for 25–30 minutes, until golden brown and set in the middle.

5. Serve

  • Let cool for 5 minutes before removing from the pan.
  • Dust with powdered sugar and drizzle with maple syrup.
  • Best enjoyed warm!

Tips & Variations

  • Make-ahead: Assemble the mixture the night before, refrigerate, and bake in the morning.
  • Savory twist: Skip sugar and cinnamon, add cheese, herbs, and cooked bacon/ham.
  • Gluten-free: Use GF bread.
  • Extra decadent: Add chocolate chips or swirl in Nutella before baking.
