Ingredients:

  • 2 eggs
  • 1 pinch of salt
  • 1 teaspoon vanilla essence
  • 1 tablespoon erythritol sweetener
  • â…” cup (125 g) unsweetened plain yogurt
  • 1 cup unsweetened finely grated coconut
  • 1 teaspoon of baking powder (Royal type)

Suggestions: If erythritol isn’t available, you can sweeten this cake with honey or brown sugar. You can also use freshly grated coconut, grating the fruit on the spot.

Preparation method:

First, crack the eggs into a bowl, add a pinch of salt, vanilla extract, and erythritol. Beat well until everything is evenly mixed.

Then, add the unsweetened natural yogurt and finely grated coconut, and mix again. 

Cover the bowl and let it rest for 5 minutes so that the coconut absorbs the yogurt, making the batter more uniform.

Then add the baking powder and mix gently until incorporated.

Grease a baking dish with butter, pour in the batter and spread it out evenly.

Bake in a preheated oven at 180°C for 30 to 35 minutes, or until the cake is golden brown and firm to the touch.

Remove from the oven, let it cool and serve this delicious coconut dessert.
