Ingredients

For the pastry and filling
  • 600 g puff pastry
  • 300 g ground beef
  • 2 whole chicken eggs (1 whole egg + 1 egg yolk) Use one whole egg and one egg yolk.
  • 2 onions (1/2 for meat, 1 1/2 for sauce and mushrooms)
  • 150 g raw mushrooms, finely chopped
  • 60 g hard cheese, grated Plus an additional 10g for the sauce.
  • 1 cup sour cream
  • 1 bunch fresh dill, chopped
  • 6 cloves garlic, minced
  • 20 ml soy sauce
  • 1 tablespoon mustard
  • 1 teaspoon paprika
  • Ground black pepper, to taste
  • Salt, to taste
  • A little vegetable oil

Method

Preparation
  1. Roll out the puff pastry on a baking tray lined with parchment paper. Shape it into a ring, leaving the center empty if desired for presentation.
  2. In a bowl, mix the ground beef with 1 egg yolk, paprika, ground black pepper, salt, and finely chopped 1/2 onion. Mix well until combined.
Assemble and Bake
  1. Spread the beef mixture evenly over the puff pastry ring. Brush the exposed pastry with egg yolk. Bake in a preheated oven at 180°C (350°F) for 20 minutes.
Prepare the Mushroom Mixture
  1. Heat a little vegetable oil in a pan. Add 1 chopped onion and cook until soft. Add the mushrooms, salt, and pepper. Cook until the moisture evaporates. Add 3 cloves of garlic and cook briefly.
Finish Baking
  1. Sprinkle 50 g grated hard cheese over the partially baked pastry and beef. Add the mushroom mixture on top. Bake again at 180°C (350°F) for 10 minutes.
Prepare the Creamy Sauce
  1. In a bowl, mix sour cream, mustard, soy sauce, remaining garlic, chopped dill, and 10 g grated cheese. Season with salt and pepper to taste.
Serve
  1. Remove the pastry from the oven and spread or drizzle the creamy sauce over the top. Serve warm.

Notes

This appetizer combines protein-rich beef with mushrooms, herbs, and dairy for a satisfying and balanced dish. Baking instead of frying keeps it lighter, while fresh dill and garlic add flavor without needing heavy sauces. It’s filling, festive, and perfect for sharing.
