Irresistible pies, ready in minutes and with the taste of grandma’s house.
If you are looking for a practical, tasty recipe that will surprise you with the result, you found it!
This little pie is unlike anything you’ve ever tasted. With a light, thin dough that literally melts in your mouth, it’s perfect for any occasion — whether it’s an afternoon snack, a party, or even to freeze and always have on hand.
The big difference in this recipe is the texture of the dough: unlike traditional empanadas, which are often dry and heavy, this version is extremely soft and tasty.Â
And the best part of all? It’s made entirely in the blender! That’s right: no fuss, no dirty dishes and ready in just a few minutes.
This recipe was designed to make everyday life easier. It’s ideal for those who have a busy routine but still want to enjoy delicious, home-cooked meals.Â
The filling is also super versatile — here we used sautéed shredded chicken, but you can vary it with whatever you have at home: corn, hearts of palm, cheese, ham, vegetables or whatever you like.
Furthermore, this recipe has a special touch that makes all the difference: a little secret at the end with brushed egg yolk and olives, which gives it that look like a bakery pie — only much tastier and made by you.
Now all you have to do is gather the ingredients and prepare this delicious treat. Trust me, you’ll fall in love with this little pie!
Dough ingredients:
-
- 2 eggs
- 1 cup of milk (200 ml)
- 60 ml of oil
- 3 tablespoons grated parmesan cheese
- ½ teaspoon of salt (be careful, the cheese already contains salt)
- 1 cup of wheat flour
For the filling (suggestion):
- Shredded and seasoned chicken
- Olives (to taste)
- Corn, hearts of palm or other optional ingredients
To conclude:
- 1 egg yolk
- 1 tablespoon of water
- Olives for decoration
Preparation method:
In a blender, add the eggs, milk, oil, grated parmesan cheese and salt. Blend well until you obtain a homogeneous mixture.
Add the wheat flour and beat again, just until incorporated. The dough will be light and creamy.
Grease the tartlet molds with butter and fill them halfway with the dough.
Add the filling of your choice (suggestion: shredded chicken with olives, corn and hearts of palm).
Cover with a little more dough, without filling it completely.
Bake in a preheated oven at 200 °C for about 20 minutes.
Remove from the oven, brush the pies with the beaten egg yolk and water and decorate with an olive on top of each one.
Return to the oven for another 10 minutes, or until golden brown.
Wait for it to cool, unmold and enjoy this delicious treat that melts in your mouth!
