Ingredients:

- 1 cup rolled oats
- 2 lemons, preferably Sicilian (we will use the zest)
- 200 g natural yogurt
- 2 tablespoons melted butter
- Stevia sweetener to taste (or another natural sweetener of your choice)
Preparation method:
Grind the oats in a blender or food processor until they form a flour — it doesn’t need to be very fine, you can leave some larger flakes to add texture.
Transfer to a bowl, add the lemon zest and the remaining ingredients. Mix well until you obtain a homogeneous mixture.
Let the dough rest for about 15 minutes, so that the oats absorb the liquids well.
Meanwhile, grease a baking tray with a little butter or line it with baking paper.
Shape the cookies with your hands into discs and place them on the baking tray.
Brush the surface with a little yogurt and bake in a preheated oven at 175 °C for approximately 30 minutes, or until lightly golden.
Remove from the oven and let cool.
