Cheesy Taco Potatoes – Diabetic-Friendly Recipe
Ingredients (Serves 4)
For the Potatoes
4 medium russet potatoes (about 6 oz each) OR 4 medium sweet potatoes for extra fiber
1 tablespoon olive oil
½ teaspoon paprika
½ teaspoon garlic powder
½ teaspoon black pepper
Pinch of salt (optional)
For the Taco Filling
1 lb (450 g) lean ground turkey or chicken (93% lean or higher)
1 small onion, finely chopped
2 garlic cloves, minced
1 small bell pepper, diced
1 teaspoon chili powder
1 teaspoon ground cumin
½ teaspoon smoked paprika
½ teaspoon oregano
¼ teaspoon cayenne pepper (optional for spice)
½ cup no-salt-added tomato sauce OR low-sodium salsa
½ cup canned black beans, rinsed and drained (optional for fiber boost)
For the Toppings
1 cup reduced-fat shredded cheddar cheese
1 cup shredded lettuce
1 medium tomato, diced
1 avocado, diced (optional, healthy fat)
¼ cup plain Greek yogurt (as a light sour cream swap)
2 tablespoons fresh cilantro, chopped
Instructions
Step 1 – Prepare the Potatoes
Preheat oven to 400°F (200°C).
Wash and scrub potatoes, then pierce each with a fork a few times.
Rub with olive oil, paprika, garlic powder, and pepper.
Place on a baking sheet and roast for 45–55 minutes, until tender.
Step 2 – Make the Taco Filling
Heat a nonstick skillet over medium heat.
Add ground turkey/chicken and cook, breaking it apart, for 5–6 minutes until browned.
Stir in onion, garlic, and bell pepper. Cook until softened.
Add chili powder, cumin, paprika, oregano, and cayenne. Stir well.
Pour in tomato sauce or salsa and simmer for 5–6 minutes until thickened.
If using, stir in black beans and cook 2 more minutes.
Step 3 – Assemble the Cheesy Taco Potatoes
Slice baked potatoes lengthwise and fluff the inside with a fork.
Spoon taco filling generously into each potato.
Sprinkle with shredded cheese and let it melt from the heat of the filling.
Top with lettuce, tomato, avocado, yogurt, and cilantro.
Step 4 – Serve
Serve warm with a side salad or steamed veggies for a complete diabetic-friendly meal.
