Buttery and crispy Zucchini Corn Fritters!

 

I love these buttery and crispy Zucchini Corn Fritters! They’re so delicious!
Perfect for brunch, snacking, or as a veggie-packed side dish!

Ingredients:

2 medium zucchinis (grated)
1/2 cup corn (fresh or canned, drained)
1/2 cup shredded cheese (cheddar or your favorite)
2 eggs
1/4 cup flour
1 tbsp grated parmesan (optional but so good)
Salt to taste
Oil for frying

Instructions:

Squeeze out the excess moisture from the grated zucchini.
In a bowl, mix the zucchini, corn, cheese, eggs, flour, parmesan, and salt until combined.
Heat a little oil in a pan over medium heat.
Scoop out spoonfuls of the batter and flatten them into fritters.
Cook 2–3 minutes per side until golden brown and crispy.
Serve warm — they’re buttery, cheesy, and bursting with flavor.
