Ingredients Needed:

    • 2 large eggplants
    • Extra virgin olive oil for brushing
    • Sweet paprika to add a touch of flavor
    • Salt and pepper to taste
    • Dried oregano for an irresistible aroma
    • 1 large onion
    • 2 Bell Peppers (various colors for more color)
  • 2 cloves of minced garlic
  • 300 grams of minced meat (you can replace it with mushrooms for a vegetarian option)
  • Seasonings: Cumin, ginger and coriander
  • 250 grams of tomato puree
  • 150ml of water
  • 150 grams of grated mozzarella cheese
  • 60 grams of grated parmesan cheese

    Step by Step Instructions:

      1. Preparing the Eggplants:
        • Wash the eggplants and cut them into slices approximately one centimeter thick.
        • In a bowl, mix olive oil with salt, sweet paprika, pepper and dried oregano. Use a brush to emulsify the mixture well.
      2. Roast the Eggplants:
        • Arrange the eggplant slices on a baking sheet lined with parchment paper.
        • Brush both sides of the slices with seasoned olive oil and bake in a preheated oven at 180°C for 20 minutes.
    1. Filling Preparation:
      • Sauté the chopped onion and diced peppers in a little olive oil until they soften.
      • Add the minced garlic and minced meat, seasoning with salt, pepper, cumin, ginger and coriander. Cook until the meat is well done.
      • Add the tomato puree and water, allowing the sauce to thicken a little.
    2. Assembly and Final Cooking:
        • Place a generous portion of the meat filling on each slice of roasted eggplant.
      • Top with mozzarella and parmesan cheese and sprinkle with a little more dried oregano.
      • Return to the oven for another 15 minutes or until the cheese is golden brown and bubbly.
