Have you ever eaten or heard of poğaça? This classic Turkish bread is traditionally served for breakfast or as a snack. It’s also a popular recipe for welcoming guests with warmth!

Ingredients:

    • 400 ml of warm milk
    • 1 tablespoon of sugar
    • 1 tablespoon of dry biological yeast
    • 1/2 cup vegetable oil
    • 1 egg white (reserve the yolk for brushing)
    • 5 cups of wheat flour (200 ml each)
    • 1 teaspoon of salt
    • 3 medium potatoes, cooked and mashed
  • Chopped parsley to taste
  • 150 g mozzarella cheese (optional, can be replaced with white cheese)

Preparation method:

In a bowl, combine warm milk, sugar, and active dry yeast. Let it sit for 10 minutes to activate the yeast.

After this time, add the oil and egg white, mixing well.

Gradually add the wheat flour, along with the salt, stirring constantly with a spatula until the dough begins to thicken.

When the dough is firmer, add the mashed potatoes and chopped parsley. Knead well until all ingredients are fully incorporated.

The dough should be slightly sticky and soft. To make it easier to handle, lightly oil your hands.

Cover the bowl with plastic wrap and let the dough rest until it doubles in size, which can take about 45 minutes, depending on the room temperature.

After rising, mix the dough lightly to remove excess air and transfer to a greased baking pan (40 cm in diameter).

With greased hands, spread the dough evenly throughout the pan and cover with a cloth, letting it rest for another 15 minutes.

After this time, make slits in the dough directly on the baking sheet. If desired, insert chunks of mozzarella cheese between the slits for extra flavor.

Mix the egg yolk with a spoonful of milk and brush gently over the dough.

Place in a preheated oven at 180°C and bake until the surface is golden brown.

Remove from the oven and let stand for 5 to 10 minutes before serving. To prevent the bread from getting soggy in the pan, transfer it to a clean tea towel.

Now just enjoy! The dough is incredibly soft and airy.
