Zucchini Lasagna Roll-Ups

Here’s a recipe for Zucchini Lasagna Roll-Ups. These are a great alternative to traditional lasagna, using zucchini in place of pasta for a lower-carb and nutrient-rich meal.
Ingredients:
2 large zucchinis
1 cup ricotta cheese (part-skim or fat-free)
1 cup shredded mozzarella cheese (part-skim or fat-free)
1/2 cup grated Parmesan cheese
1 large egg
1 cup marinara sauce (low-sugar or homemade)
1 cup cooked ground turkey or lean ground beef (optional)
1/4 cup fresh basil, chopped (or 1 tsp dried basil)
1/4 tsp garlic powder
1/4 tsp onion powder
Salt and pepper to taste
Olive oil spray or cooking spray
Instructions:
Prepare the Zucchini:
Slice the zucchinis lengthwise into thin, even slices (about 1/8 inch thick). You can use a mandoline slicer for uniform thickness.
Lightly spray a baking sheet with olive oil spray. Lay the zucchini slices in a single layer and lightly spray the tops with more olive oil.
Bake in a preheated oven at 400°F (200°C) for 8-10 minutes, or until the zucchini slices are slightly tender but not too soft. Remove from the oven and let cool slightly.
Prepare the Filling:
In a mixing bowl, combine the ricotta cheese, 1/2 cup of shredded mozzarella, grated Parmesan cheese, and the egg. Mix until smooth.
Stir in the fresh basil (or dried basil), garlic powder, onion powder, salt, and pepper.
If using, mix in the cooked ground turkey or beef.
Assemble the Roll-Ups:
Spread a small amount of marinara sauce in the bottom of a baking dish.
On each zucchini slice, spread a spoonful of the ricotta mixture.
Roll up each zucchini slice and place it seam-side down in the baking dish.
Repeat with the remaining slices.
Top and Bake:
Once all the roll-ups are in the dish, spread the remaining marinara sauce over the top.
Sprinkle the remaining 1/2 cup of shredded mozzarella cheese over the sauce.
Cover with foil and bake in the preheated oven at 375°F (190°C) for 20-25 minutes, or until the cheese is melted and bubbly. Remove the foil for the last 5 minutes to allow the cheese to brown slightly.
Cool and Serve:
Allow the roll-ups to cool slightly before serving.
