The Best Carrot Cake Ever!



Ingredients:


– 2 cups all-purpose flour
– 2 tsp baking powder
– 1 1/2 tsp baking soda
– 1 tsp salt
– 2 tsp ground cinnamon
– 1/2 tsp ground nutmeg
– 1/2 cup unsalted butter, melted
– 1 cup granulated sugar
– 1 cup brown sugar
– 4 large eggs
– 1 tsp vanilla extract
– 1 cup vegetable oil
– 3 cups grated carrots
– 1 cup crushed pineapple, drained
– 1 cup shredded coconut
– 1 cup chopped walnuts


Directions:


1. Preheat the oven to 350°F (175°C) and grease and flour a 9×13-inch cake pan.
2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
3. In a large bowl, mix together the melted butter, granulated sugar, brown sugar, eggs, and vanilla extract until well combined.
4. Gradually mix in the dry ingredients until just combined.
5. Fold in the vegetable oil, grated carrots, crushed pineapple, shredded coconut, and chopped walnuts until evenly distributed in the batter.
6. Pour the batter into the prepared cake pan and smooth the top with a spatula.
7. Bake in the preheated oven for 35-40 minutes or until a toothpick inserted into the center comes out clean.
8. Remove from the oven and let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
