Ingredients
For the beef:
1 lb flank steak or sirloin, thinly sliced against the grain
2 tbsp soy sauce
1 tbsp oyster sauce
1 tsp cornstarch
1 tsp sesame oil (optional, for depth)
½ tsp sugar (to balance flavor)
For the onions & stir-fry:
2 large onions, thinly sliced
2 tbsp vegetable oil (divided)
2 cloves garlic, minced
1 tsp ginger, minced (optional)
1 tbsp soy sauce (extra, for onions)
½ tbsp brown sugar (for caramelizing onions)
2 tbsp water or beef broth (if needed, for deglazing)
Fresh ground black pepper, to taste
Green onions or sesame seeds (for garnish)
Instructions
Marinate the beef:
In a bowl, combine sliced beef with soy sauce, oyster sauce, cornstarch, sesame oil, and sugar.
Mix well and let marinate at least 15 minutes (up to 1 hour for deeper flavor).
Caramelize the onions:
Heat 1 tbsp oil in a large skillet or wok over medium heat.
Add onions, sprinkle with brown sugar, and cook slowly (8–10 minutes), stirring until golden and sweet.
Add a splash of soy sauce and stir. Remove onions and set aside.
Cook the beef:
Increase heat to high. Add remaining oil.
Stir-fry beef quickly (2–3 minutes) until browned but still tender.
Add garlic and ginger; cook 30 seconds.
Combine:
Return caramelized onions to the pan.
Toss with beef, adding a splash of water or broth if the pan looks dry.
Season with black pepper to taste.
Serve:
Garnish with green onions or sesame seeds.
Best served hot with steamed rice or noodles.
