Crispy Battered Cod and Onion Ring Platter!
Treat yourself to a delicious and easy-to-make meal! This recipe is perfect for a comforting Friday night in, and it’s gentle on the joints (no strenuous chopping!).
**What you’ll need:**
**For the Cod:**
* 2 cod fillets (about 6 oz each), skin on or off, your preference!
* 1 cup all-purpose flour
* 1 tsp baking powder
* 1/2 tsp salt
* 1/4 tsp black pepper
* 1/2 cup milk (or plant-based milk)
* Vegetable oil for frying
**For the Onion Rings:**
* 2 large onions, thinly sliced into rings (a mandoline slicer helps, but isn’t essential!)
* 1/2 cup all-purpose flour
* 1/4 tsp salt
* 1/4 tsp paprika (optional, for a little extra color)
* Vegetable oil for frying
**Instructions:**
**Prepare the Batter (Cod):** In a bowl, whisk together the flour, baking powder, salt, and pepper. Gradually whisk in the milk until you have a smooth batter. It should be a little thicker than pancake batter.
**Prepare the Onion Rings:** In a separate bowl, toss the onion rings with flour, salt, and paprika (if using).
**Fry the Cod:** Heat about 1 inch of vegetable oil in a large skillet over medium-high heat. Dip each cod fillet into the batter, ensuring it’s fully coated. Carefully place the battered cod into the hot oil. Fry for about 3-4 minutes per side, or until golden brown and cooked through. Remove and drain on paper towels.
**Fry the Onion Rings:** Once the cod is cooked, add the floured onion rings to the skillet (you may need to add a little more oil). Fry for 2-3 minutes per side, or until golden brown and tender. Remove and drain on paper towels.
**Serve:** Arrange the crispy cod fillets and onion rings on a platter. Serve immediately with your favourite tartar sauce (store-bought is perfectly fine!), lemon wedges, and maybe some mushy peas for a classic touch!
